Aged 4-5 years and crafted using the distinctive sweet mash process with 100% fresh ingredients in every batch, never reusing backset from previous batches. Made with a high-corn mashbill of 73% Indiana corn, 19% rye, and 8% malted barley sourced from local family farmers. Distilled on custom Vendome copper column still and aged in Independent Stave Company custom Cooper Select barrels with 18-24 month seasoned staves. Appearance: Warm amber-golden to tawny with excellent legs and decent viscosity, reflecting quality barrel aging.

Aroma: Well-balanced and inviting with layers of brown sugar, dark cherries, and plums alongside sweet caramel and glazed cinnamon rolls. Complemented by vanilla, candied pecans, clove, a touch of orange citrus, light cedar, and gentle rye spice. The sweet mash process brings forward exceptional grain character.

Palate: Noticeably buttery and dessert-forward with mellow sweet oak dominating the flavor profile. Rich notes of caramel, toffee, butterscotch, cherry, and vanilla cream create a luxurious mouthfeel. Candied pecans and light dry oak add complexity while maintaining an approachable sweetness throughout.

Finish: Warming and long with a pleasant jolt of white pepper spice that quickly settles. Charred oak, milk chocolate, coffee notes reminiscent of Kahlua, mixed nuts, and lingering mild rye spices provide excellent depth. A hint of dark cherries returns on the tail with persistent warmth.
