Kilchoman 100% Islay Sherry Cask Matured – 11 Years Old (700 mL / 50% ABV)

This special edition from Kilchoman is part of their exclusive 100% Islay line — meaning every step from barley growing, malting, distilling, maturing and bottling happens on Islay’s Rockside Farm. This edition was distilled from the 2011, 2012 and 2013 barley harvests and matured for a minimum of 11 years in first‑fill ex‑Oloroso sherry butts from Jerez, Spain. Bottled at 50 % ABV, with no added colour or chill‑filtration. 

Tasting Notes

• Nose: Rich and inviting. Dried fruits (raisins, plums), orange peel, dark chocolate, gentle peat smoke, and warm spice (nutmeg, cinnamon) weave together. 

• Palate: Full‑bodied with a textured mouthfeel. Cooked apples, honeyed barley bread, dark chocolate, a touch of malt sweetness, and underlying peat smoke. The sherry cask influence brings depth of dark fruit and oak. 

• Finish: Long and satisfying. Grilled fruits, dried dark berries, a slow building peat smoke, and lingering oak tannin with a briny sea‑air whisper and chocolate‑dusted aftertaste.
