The No. 9 Blanco is filled with aromas and flavors of cooked agave, some black pepper, minerality, earthiness, a bit of citrus, and anise. At 100 proof, No. 9 definitely has a bit of alcohol in its profile, but also a bit deeper flavors. 80 proof No. 7 is a wonderful, and comparatively gentle experience; No. 9, and 110 proof No. 10 ratchet up that experience considerably. All of them are excellent, with the only downside are the comparatively high price compared to many other brands."
